10 Minute Air Fryer Chicken Sausage and Veggies

A quick and colorful meal featuring chicken sausage and vegetables, cooked to perfection in an air fryer in just ten minutes.

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • pinch of black pepper
  • 1 package chicken sausage (12 oz), sliced into 3/4 inch rounds

Instructions

  1. Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss to coat.
  2. In a smaller bowl, mix the spices with salt and pepper and add to the veggies. Toss to coat.
  3. Slice the chicken sausage and add it to the bowl with the veggies. Toss everything together.
  4. Preheat the air fryer to 390°F if needed and spray the basket with cooking spray.
  5. Add the veggie and sausage mixture to the air fryer basket in an even layer and cook for 10 minutes, flipping halfway through for even cooking.
  6. Once cooked, serve hot with rice or warm tortillas if desired.

Notes

For best results, cut vegetables evenly to ensure consistent cooking. Don’t overcrowd the air fryer basket to allow for proper air circulation.
