- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, fresh
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat, sauté garlic, zucchini, and bell pepper until softened.
- In a bowl, mix ricotta cheese, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Add a layer of noodles, followed by ricotta mixture, sautéed vegetables, spinach, mozzarella, and more marinara sauce.
- Repeat layers until all ingredients are used, finishing with sauce and mozzarella on top.
- Sprinkle parmesan cheese over the top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
