24 pearl onions, peeled
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
2 large eggs
1/4 cup milk
1 cup panko breadcrumbs
1–2 tbsp olive oil or cooking spray
Instructions
Bring a small pot of water to a boil. Add the pearl onions and boil for 1 minute, then drain and cool in cold water. Peel the thin outer skin.
With a small knife, make 4 shallow vertical cuts around each onion from top to bottom, without cutting all the way through.
In bowl one, mix flour, salt, pepper, garlic powder, and paprika. In bowl two, whisk eggs and milk. In bowl three, place the panko.
Roll each onion in the flour mix, dip in the egg mix, and press into panko to coat all sides.
Preheat the air fryer to 390°F (200°C) for 3 minutes.
Place onions in a single layer in the basket, spray lightly with cooking spray, and air fry for 8–12 minutes, flipping halfway, until golden and crisp.
Let them rest for 1–2 minutes before serving warm with your favorite dip.
Notes
For crispier results, avoid overfilling the air fryer basket and consider cooking in batches. For extra flavor, mix grated Parmesan into the panko.
