  • 2 egg whites
  • 1 teaspoon lemon zest
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground almonds, sugar, and lemon zest.
  3. Stir in the egg whites until the mixture is well combined.
  4. Gradually add flour and mix until a dough forms.
  5. Scoop small amounts of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the tops are crackled and lightly golden.
  7. Allow to cool before serving.

Notes

For a lighter cookie, beat the egg whites until soft peaks form.
