Apple Crisp Cheesecake

A delightful blend of creamy cheesecake and warm apple crisp, topped with a crunchy streusel.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 3 cups apples, peeled and sliced
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1/2 cup oats
  • 1/2 cup butter, softened

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust.
  6. In another bowl, combine sliced apples, cinnamon, brown sugar, flour, oats, and softened butter to make the streusel topping.
  7. Spread the apples over the cheesecake layer and sprinkle the streusel on top.
  8. Bake for about 60-70 minutes, or until the center is set.
  9. Allow the cheesecake to cool before serving.

Notes

Serve chilled, plain or with whipped cream; store leftovers in the refrigerator for up to 5 days.
