Apple Crumble Cheesecake

A delightful combination of creamy cheesecake and warm apple crumble with a crunchy cookie base.

  • 1 cup crushed cookies (for crust)
  • 1/2 cup butter, melted (for crust)
  • 2 cups cream cheese
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups sliced apples
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup flour (for crumble)
  • 1/2 cup brown sugar (for crumble)
  • 1/4 cup oats (for crumble)
  • 1/2 cup butter (for crumble)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed cookies with melted butter and press into the bottom of a springform pan.
  3. Beat cream cheese and sugar together until smooth. Add eggs one at a time, then stir in vanilla.
  4. Pour the cheesecake filling over the crust.
  5. In another bowl, toss apple slices with cinnamon and nutmeg and arrange them on top of the cheesecake filling.
  6. For the crumble, mix flour, brown sugar, oats, and butter until crumbly. Sprinkle over the apples.
  7. Bake for 45-50 minutes or until set.
  8. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

For a lighter version, use low-fat cream cheese. Cover with foil if top browns too quickly.
