  • 2 dozen chocolate-covered butter cookies
  • 8 ounces mascarpone cheese
  • 1/2 cup Baileys Irish Cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate for coating (optional)
  • Cocoa powder or crushed chocolate for dusting (optional)

Instructions

  1. In a large bowl, crush the chocolate-covered butter cookies into fine crumbs.
  2. Add mascarpone cheese, Baileys Irish Cream, powdered sugar, and vanilla extract to the bowl.
  3. Mix until everything is well combined and a dough forms.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. If desired, roll the balls in cocoa powder or crushed chocolate for a finishing touch.
  6. Chill the cheesecake balls in the refrigerator for at least 1 hour before serving.

Notes

Use cold mascarpone for a firmer dough. If the mix is too soft, chill it for 15-20 minutes before rolling. Store in an airtight container in the fridge for up to 5 days or freeze for up to 1 month.
