Baked Spinach Mushroom Quesadillas

Quick and delicious baked quesadillas filled with fresh spinach and savory mushrooms, topped with gooey melted mozzarella.

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms and sauté until softened, about 3-4 minutes.
  4. Add the chopped spinach and cook until wilted.
  5. Remove from heat and mix in garlic powder and black pepper.
  6. Place a tortilla in the skillet, sprinkle some mozzarella cheese on one half, add the spinach and mushroom mixture, and top with more cheese.
  7. Fold the tortilla over and cook for 2-3 minutes on each side until golden and crispy.
  8. Transfer to a baking sheet and repeat with remaining tortillas.
  9. Bake in the preheated oven for 5-10 minutes until the cheese is melted and bubbly.
  10. Serve hot, cut into wedges.

Notes

Best served with salsa, sour cream, or a light salad. Can also be made ahead and stored for up to 3 days.
