Banana Oatmeal Muffins

Healthy and delicious banana oatmeal muffins perfect for breakfast or a quick snack.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)
  • 1 egg (optional for binding)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas in a large bowl.
  3. Add the rolled oats, milk, maple syrup (if using), baking powder, baking soda, cinnamon, and salt. Mix until well combined.
  4. Fold in chocolate chips or blueberries, if desired.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes in the pan before transferring to a wire rack. Enjoy your muffins!

Notes

Ensure bananas are really ripe for the best sweetness. Omit the egg for denser muffins.
