Bang Bang Fried Rice

A quick and flavorful fried rice dish featuring a creamy, spicy bang bang sauce, perfect for using up leftovers.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons bang bang sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 2 tablespoons oil (for cooking)
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add the mixed vegetables and cook until tender.
  3. Push the veggies to one side and add the beaten eggs to the other side of the pan, scrambling them.
  4. Once eggs are cooked, add the cooked chicken and rice to the pan.
  5. Pour the bang bang sauce and soy sauce over the mixture.
  6. Stir everything together and cook until heated through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

Notes

Use day old rice for the best texture. Feel free to substitute with shrimp, tofu, or more vegetables.
