BBQ Chicken Quesadillas

Quick and tasty BBQ Chicken Quesadillas filled with chicken, cheese, and BBQ sauce, perfect for any meal.

  • 2 cups cooked chicken, shredded or chopped
  • 1/2 cup BBQ sauce (more to taste)
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tbsp chopped cilantro (optional)
  • 12 tbsp butter or oil for cooking
  • Salt and pepper to taste

Instructions

  1. Mix the chicken and BBQ sauce in a bowl. Taste and add salt or more sauce if needed.
  2. Heat a skillet over medium heat. Add a little butter or oil.
  3. Place one tortilla in the skillet. Sprinkle a thin layer of cheese over half the tortilla.
  4. Add a layer of the BBQ chicken, a few onion slices, and cilantro if using.
  5. Top with more cheese and fold the tortilla over.
  6. Cook for 2–3 minutes until the bottom is golden brown. Flip and cook the other side for 2–3 minutes until golden and the cheese is melted.
  7. Remove and let rest for 1 minute, then cut into wedges. Repeat with remaining tortillas.

Notes

Use leftover or rotisserie chicken to save time. For crispier quesadillas, brush the outside of the tortilla with butter before cooking.
