A colorful and flavorful broccoli pasta salad perfect for picnics and potlucks.

Ingredients

  • 8 ounces pasta (such as rotini or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Combine the broccoli, cooked pasta, cherry tomatoes, red onion, cheddar cheese, and bacon (if using) in a large bowl.
  3. Whisk together the mayonnaise, apple cider vinegar, salt, and pepper in a separate bowl. Pour the dressing over the pasta mixture and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving. Enjoy your vibrant salad!

Notes

Rinse the pasta in cold water to stop cooking and prevent clumping. Adjust dressing to taste with more vinegar for tang.
