Blueberry Cottage Cheese Breakfast Bake

A simple and healthy dish loaded with protein and fiber, perfect for breakfast or a snack.

  • 2 cups cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the cottage cheese, eggs, honey or maple syrup, vanilla extract, baking powder, cinnamon, and salt.
  3. Stir in the oats and blueberries until well combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 30-35 minutes, or until the top is golden and the bake is set.
  6. Let cool slightly before slicing and serving. Enjoy warm or refrigerate for later!

Notes

Serve warm with honey, yogurt, or fresh berries. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
