  • 2 large carrots, grated
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard

  • Salt and pepper to taste
  • Optional: chopped herbs (like parsley or cilantro) for garnish

Instructions

  1. In a large bowl, combine the shredded green cabbage, red cabbage, and grated carrots.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss to combine thoroughly.
  4. Allow the coleslaw to sit for at least 30 minutes in the refrigerator to let the flavors meld.
  5. Garnish with chopped herbs before serving if desired.

Notes
