Boston Cream Inspired Cookies

These delightful cookies combine the classic flavors of Boston cream pie into a tasty sandwich cookie format.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 3/4 cup custard or vanilla pudding
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, cream together the butter, granulated sugar, and powdered sugar.
  2. Beat in the egg and vanilla extract.
  3. Gradually mix in the flour and cocoa powder until combined.
  4. Drop spoonfuls of dough onto a lined baking sheet and flatten slightly.
  5. Bake for 10-12 minutes, then let cool.
  6. Whip the heavy cream and fold in the custard or vanilla pudding until combined.
  7. Spoon the cream mixture onto the bottom of half the cookies and top with another cookie to form a sandwich.
  8. Melt chocolate chips and drizzle over the top of each cookie sandwich. Let set before serving.

Notes

Store the cookies in an airtight container in the refrigerator and consume within a week. Allow cookies to cool completely before adding the cream filling.
