Boston Cream Pie Cookies

A delightful spin on the classic Boston cream pie in cookie form, combining buttery cookies, vanilla cream, and chocolate for a bite-sized treat.

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract (for cream filling)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture until well combined.
  6. Drop tablespoon-sized amounts of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes until the edges are lightly golden. Allow to cool completely.
  8. For the filling, heat the heavy cream in a saucepan and whisk in cornstarch and the additional vanilla extract until thickened.
  9. Once cooled, pipe or spoon the cream filling onto the bottom of half the cookies and top with another cookie to form a sandwich.
  10. In a microwave-safe bowl, melt the chocolate chips with the vegetable oil, stirring until smooth.
  11. Drizzle or spread the chocolate glaze over the top of each cookie sandwich.
  12. Allow the glaze to set before serving.

Notes

Store cookies in an airtight container in the refrigerator. They are best enjoyed within the first few days.
