Boston Cream Pie Cookies

Delightful cookies that merge the classic flavors of Boston cream pie into a portable treat.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until the dough comes together.
  6. Drop tablespoonfuls of the dough onto baking sheets, leaving space between each cookie.
  7. Bake in the preheated oven for 10-12 minutes until lightly golden. Let them cool on a wire rack.
  8. In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  9. Once the cookies are cool, sandwich whipped cream between two cookies.
  10. In a microwave-safe bowl, melt the chocolate chips and butter until smooth. Drizzle the chocolate over the cookies.

Notes

Store cookies in an airtight container in the refrigerator for up to five days. Add whipped cream filling before serving for best taste.
