Breakfast Sweet Potatoes

A hearty breakfast featuring baked sweet potatoes topped with crispy bacon, eggs, and melted cheese.

  • 2 large sweet potatoes
  • 4 slices of bacon
  • 4 eggs
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork; rub with olive oil and season with salt.
  3. Bake the sweet potatoes for 45 minutes or until tender.
  4. In a skillet, cook the bacon until crispy. Remove and crumble.
  5. In the same skillet, cook the eggs to your liking.
  6. Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
  7. Top each sweet potato with cooked bacon, eggs, and shredded cheese.
  8. Return to the oven for a few minutes until the cheese is melted.
  9. Serve warm and enjoy!

Notes

Choose firm sweet potatoes of similar size for even cooking. For a vegetarian option, skip bacon and add beans or roasted mushrooms.
