Brown Sugar Cinnamon Cookies

  • 1 teaspoon baking soda

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  3. In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually blend the dry ingredients into the wet mixture until fully combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. If desired, dust with powdered sugar before serving.

Store cookies in an airtight container at room temperature for about a week or freeze for up to three months.
