Brown Sugar Pop Tart Cookies

These Brown Sugar Pop Tart Cookies are soft, sweet, and fun to make, resembling little pop tarts with brown sugar and icing on top.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup icing sugar
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick. Cut into rectangles.
  6. Bake the cookies on a lined baking sheet for 10-12 minutes or until lightly golden around the edges.
  7. While the cookies are cooling, prepare the icing by mixing icing sugar with a little water and food coloring if desired.
  8. Once the cookies are cool, spread icing on top and add sprinkles if using.
  9. Let the icing set before serving.

Notes

Don’t overmix the dough; stop when it just comes together. If the dough is too soft, chill for 20 minutes before rolling.
