Bruschetta Chicken Pasta

A quick and fresh pasta dish that combines seared chicken, bright cherry tomatoes, and basil, perfect for weeknight dinners.

  • 2 chicken breasts
  • 8 oz pasta (like penne or fusilli)
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large pan, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add chicken breasts, season with salt and pepper, and cook until browned and cooked through.
  5. Remove chicken from the pan, let rest for a few minutes, and then slice.
  6. In the same pan, add cherry tomatoes and cook until they start to soften.
  7. Stir in cooked pasta, basil, and sliced chicken. Mix well to combine and cook for another minute.
  8. Serve hot, topped with Parmesan cheese if desired.

Notes

Use ripe cherry tomatoes for best flavor; fresh basil is essential. You can modify the protein or pasta shape as desired.
