Butter Pecan Cookies

Chewy and delicious Butter Pecan Cookies combine rich buttery flavor with the nutty taste of pecans for a perfect treat.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into the wet ingredients until just combined. Fold in chopped pecans.
  5. Refrigerate the dough for at least 1 hour (or up to 2 days) to chill and firm.
  6. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake 10–12 minutes, or until the edges are golden and centers are slightly soft.
  8. Remove from oven and cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough helps the flavors develop and prevents spreading during baking.
