Carrot Apple Salad

A quick, healthy salad that combines the sweetness of apples and carrots with a creamy yogurt dressing, perfect as a side or light lunch.

  • 2 red apples, sliced
  • 2 green apples, sliced
  • 2 large carrots, grated
  • 1/2 cup dried cranberries
  • 1 cup mandarins, segmented
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayonnaise
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced red and green apples, grated carrots, dried cranberries, and mandarin segments.
  2. In a separate bowl, mix together the vanilla yogurt and mayonnaise until smooth.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Serve chilled.
