Cheesecake Caramel Cookies

Delicious cookies combining the rich creaminess of cheesecake with the sweet surprise of caramel.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1 cup caramel sauce
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, mix together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture.
  5. Make small balls of cookie dough and flatten them slightly.
  6. Place a small dollop of cream cheese and a teaspoon of caramel sauce in the center of each cookie, then fold the dough around it to encase it.
  7. Place the cookies on a baking sheet lined with parchment paper.
  8. Bake for 12 to 15 minutes or until the edges are golden brown.
  9. Let them cool slightly before enjoying!

Notes

Make sure to store cookies in an airtight container to keep them fresh for up to a week.
