Cheesy Chicken Potatoes

Comforting stuffed potatoes with a cheesy chicken filling, perfect for a cozy meal.

Ingredients

  • 2 large potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the potatoes until tender, then drain and let them cool slightly.
  3. Cut the potatoes in half and scoop out some of the flesh, leaving a shell.
  4. Mix the scooped potato, shredded chicken, cheese, sour cream, milk, butter, salt, and pepper in a bowl.
  5. Fill the potato shells with the chicken mixture.
  6. Place the filled potatoes on a baking sheet and bake for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish with green onions or parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven or microwave.
