Cheesy Taco Rice Skillet

A quick and flavorful one-pan dinner with ground beef, beans, corn, and cheese that’s perfect for busy weeknights.

Ingredients

  • 1 lb lean ground beef
  • 1 can beans (black or pinto), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup salsa
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef over medium heat until cooked through.
  2. Drain excess fat, if necessary.
  3. Add the beans, corn, taco seasoning, and salsa to the skillet, stirring to combine.
  4. Stir in ready rice and mix well.
  5. Reduce heat to low and sprinkle cheese on top.
  6. Cover the skillet and let it simmer until the cheese is melted, about 5 minutes.
  7. Season with salt and pepper to taste.
