Chewy Christmas Cranberry Orange Cookies

Delicious and chewy cookies featuring the festive flavors of cranberries and orange zest, perfect for the holiday season.

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange
  • 1 cup dried cranberries, roughly chopped
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup chopped nuts (like pecans or walnuts, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract to the creamed mixture and beat well to combine.
  5. Stir in the orange zest until well incorporated.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  7. Gently fold in the chopped cranberries, white chocolate chips, and nuts using a spatula or wooden spoon.
  8. Drop rounded balls of dough onto the prepared cookie sheets, spacing about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden and the centers are set but still soft.
  10. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

Make sure your butter is softened for easy mixing. Don’t overmix the dough to keep the cookies chewy.
