Chicken Avocado Melt Sandwich

A simple, warm sandwich filled with chicken, avocado, melted cheese, and a tangy mustard mayo on toasted bread.

Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 avocado sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion thinly sliced
  • 1 tomato sliced
  • Butter or olive oil for grilling

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium-high heat.
  3. Cook the chicken for 6-7 minutes on each side until fully cooked. Remove and let rest.
  4. Slice the avocado and prepare the cheese.
  5. Spread mayonnaise and Dijon mustard on each slice of bread.
  6. On two slices, layer chicken, avocado, and cheese, then add red onion and tomato.
  7. Top with remaining slices of bread, mayo side down.
  8. Heat a skillet and add butter or olive oil.
  9. Cook sandwiches until golden brown and cheese is melted, about 3-4 minutes each side.
  10. Let cool slightly, then slice in half and serve warm.

Notes

For best results, let the cooked chicken rest before slicing and use ripe avocados to avoid mushiness.
