Chicken & Rice Bowls with Creamy Garlic Sauce

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken and season with salt and pepper. Cook until browned and fully cooked, about 6-8 minutes.
  3. Add mixed vegetables and cook until tender, about 5 minutes.
  4. Stir in minced garlic and cook for an additional 1 minute.
  5. Pour in chicken broth and bring to a simmer.
  6. Reduce heat to low and stir in heavy cream.
  7. Cook for another 2-3 minutes until the sauce thickens.
  8. Serve the chicken and vegetable mixture over cooked rice and garnish with fresh parsley.
