Chicken Shawarma with Garlic Sauce

A simple and flavorful chicken shawarma recipe that combines spiced chicken with a rich garlic sauce, served in pita bread with fresh vegetables.

  • 1 lb boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup garlic sauce
  • Fresh vegetables (lettuce, tomatoes, cucumbers) for serving

Instructions

  1. In a bowl, mix olive oil with cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper to create a marinade.
  2. Add chicken thighs to the marinade and coat well. Allow to marinate for at least 1 hour, preferably overnight.
  3. Preheat the grill or skillet over medium-high heat. Cook the marinated chicken for about 6-8 minutes on each side or until fully cooked.
  4. Remove from heat and let it rest before slicing it thinly.
  5. Serve the sliced chicken in pita bread with garlic sauce and fresh vegetables.

Notes

Marinate longer for more flavor and for best results, use thighs for juicier meat. Don’t overcrowd the cooking surface for an even sear.
