Chicken Zucchini Stir Fry

A quick and delicious Chicken Zucchini Stir Fry, packed with protein and fresh veggies, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts, sliced
  • 2 zucchinis, sliced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: sesame seeds and green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and stir for about 30 seconds until fragrant.
  4. Add sliced zucchinis and bell pepper, and stir fry for another 3-5 minutes until vegetables are tender but still crisp.
  5. Pour soy sauce over the stir fry, season with salt and pepper, and mix well.
  6. Cook for an additional 1-2 minutes.
  7. Serve hot, garnished with sesame seeds and green onions if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in a skillet or microwave until heated through.
