Chicken Zucchini Stir Fry

A quick and healthy stir fry featuring chicken, zucchini, and bell peppers, perfect for busy weeknight dinners.

Ingredients

  • 2 chicken breasts, sliced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced chicken breasts and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the sliced zucchini and bell pepper to the skillet and stir-fry for about 5 minutes until tender.
  5. Pour in the soy sauce and mix well, cooking for an additional minute.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For extra flavor, garnish with sesame seeds or green onions. Can be served over rice or noodles.
