23 overripe bananas (mashed)

1/2 cup Greek yogurt (or sour cream)

2 large eggs (room temp)

1/2 cup neutral oil (like avocado or vegetable)

1 tsp vanilla extract

1/2 cup white sugar (or coconut sugar)

1 1/2 cups all-purpose flour

1 tsp baking soda

1/4 tsp salt

3/4 cup chocolate chips (tossed in 1 tsp flour)

Instructions

1. Preheat oven to 350°F. Grease a 9×5 loaf pan.

2. In a large bowl, mash bananas. Add eggs, oil, yogurt, vanilla, and sugar. Whisk well.

3. In a separate bowl, mix flour, baking soda, and salt.

4. Add dry ingredients to wet ingredients. Mix until just combined.

5. Fold in floured chocolate chips gently.

6. Pour batter into loaf pan and top with extra chips.

7. Bake 50–60 minutes, or until toothpick comes out with a few moist crumbs.

8. Let cool in pan 10–15 minutes, then transfer to wire rack.

9. Slice once fully cooled. Store airtight.

Notes

Sub coconut sugar for lower glycemic index.

Use mini chocolate chips for even distribution.

Add 1 tbsp flaxseed for extra fiber.
