Christmas Salad with Honey Mustard Dressing

A colorful and festive salad perfect for holiday tables, combining sweet and tart flavors with crunchy textures.

  • 4 cups baby spinach or mixed greens
  • 1 cup fresh pomegranate seeds
  • 1 cup fresh cranberries (or dried cranberries)
  • 1 medium apple, thinly sliced (such as a Gala or Granny Smith)
  • ½ cup candied pecans or walnuts
  • ½ cup crumbled feta cheese (optional)
  • ¼ cup red onion, thinly sliced (optional)
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and dry the baby spinach or mixed greens.
  2. Place greens into a large salad bowl.
  3. Add pomegranate seeds, cranberries, thin apple slices, and red onion if using.
  4. Sprinkle candied nuts and crumbled feta on top.
  5. In a small bowl or jar, add honey, Dijon mustard, and apple cider vinegar.
  6. Slowly whisk in olive oil until smooth. Season with salt and pepper to taste.
  7. Just before serving, pour the dressing over the salad and toss gently to coat.
  8. Serve immediately for the best texture.

Notes

Make the dressing ahead and store in the fridge for up to 5 days. Store salad ingredients separately if possible.
