2 cups all-purpose flour
1 cup granulated sugar
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter (cold and cubed)
1 cup buttermilk
2 tsp vanilla extract
1/2 cup brown sugar
2 tbsp ground cinnamon
1/4 cup unsalted butter (melted)
8 oz cream cheese (softened)
1/4 cup unsalted butter (softened)
2 cups powdered sugar
2 tbsp milk
1 tsp vanilla extract
Instructions
Preheat the oven to 350°F (175°C). Grease a baking dish.
In a large bowl, combine flour, granulated sugar, baking powder, baking soda, and salt.
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until crumbly.
Pour in the buttermilk and vanilla extract. Stir until just combined.
In a separate bowl, mix brown sugar and cinnamon.
Spread half of the batter into the prepared baking dish.
Sprinkle the cinnamon-sugar mixture over the batter evenly.
Spoon the remaining batter on top and gently spread it out.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
While the bars cool, make the icing. In a mixing bowl, beat softened cream cheese and softened butter until smooth. Gradually add powdered sugar, milk, and vanilla extract. Mix until creamy.
Once the bars are cool, spread the cream cheese icing on top.
