Club Sandwich Pasta Salad

A delightful mix of sandwich flavors turned into a refreshing pasta salad, perfect for picnics and potlucks.

  • 8 oz rotini pasta
  • 1 cup cooked turkey, diced
  • 1 cup cooked ham, diced
  • 1/2 cup crispy bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumbers
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Optional: lettuce leaves for serving

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, turkey, ham, bacon, tomatoes, cucumbers, and cheese.
  3. In a separate small bowl, mix together mayonnaise, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta salad and mix until well combined.
  5. Serve chilled on a bed of lettuce if desired, or refrigerate until ready to serve.

Notes

For a brighter flavor, add a squeeze of fresh lemon juice or a teaspoon of white wine vinegar to the dressing. This salad can be made ahead, but keep the lettuce separate until serving for extra crunch.
