Coffee Cake

A delightful and moist coffee cake with a streusel topping, perfect for morning coffee or afternoon tea.

Ingredients

  • 1 egg
  • 1/4 cup vegetable or canola oil
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 cups flour
  • 2 T butter, melted
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 2 T flour
  • 1/2 cup walnuts, chopped (optional)
  • 1 T butter, room temperature
  • 3/4 cup powdered sugar
  • 1 T milk (extra, if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the egg, oil, vanilla, and sugar until well combined.
  3. Add the milk, salt, and baking powder. Mix again.
  4. Gradually add the flour and stir until just combined. Do not over-mix.
  5. Pour the batter into a greased baking pan.
  6. In a small bowl, mix the melted butter, brown sugar, cinnamon, 2 T flour, and walnuts (if using) to create the streusel.
  7. Sprinkle the streusel evenly over the batter in the baking pan.
  8. In another small bowl, mix the powdered sugar and 1 T milk. Adjust with extra milk if needed to reach desired consistency.

Notes

Avoid over-mixing the batter for a fluffy texture. For a nut-free version, you can omit the walnuts.
