Copycat Crumbl Salted Caramel Cheesecake Cookies

  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1½ cups flour
  • 1½ cups crushed graham crackers

  • ½ tsp baking powder
  • ½ cup crushed graham crackers (for rolling)
  • 8 oz softened cream cheese
  • 8 oz softened butter (for frosting)
  • 2½ cups powdered sugar
  • 2 tsp vanilla extract (for frosting)
  • 1¼ cups brown sugar (for caramel)
  • ½ cup whipping cream (for caramel)
  • 5 tbsp butter (for caramel)
  • 1 tbsp vanilla extract (for caramel)
  • ¼ tsp salt (for caramel)

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add in the vanilla extract and eggs. Mix until well combined.
  4. Gradually add flour, salt, baking powder, and baking soda, mixing until incorporated.
  5. Slowly add 1½ cups of crushed graham crackers and mix until blended.
  6. Use a 2-inch cookie scoop to scoop the dough and roll it in the remaining crushed graham crackers. Place on lined cookie sheets and flatten slightly until about ¾ inch thick.
  7. Bake for 8-10 minutes or until slightly golden brown around the edges.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.
  9. Prepare the frosting by mixing softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract until creamy.
  10. For the caramel topping, combine brown sugar, whipping cream, butter, vanilla extract, and salt in a saucepan. Cook over medium heat, stirring constantly until thickened.
  11. Once cooled, frost cookies with cream cheese frosting and drizzle with salted caramel.

Notes

For thicker frosting, add more powdered sugar. For added flavor, consider a touch of cinnamon in the dough.
