A quick and flavorful bowl recipe featuring brown rice, chicken, beans, corn, and fresh toppings, reminiscent of the popular Panera Baja Bowl.

  • 1 pound cooked chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup cilantro, chopped
  • Lime wedges
  • Spices (cumin, chili powder, salt, pepper) to taste
  • Dressing (e.g., chipotle ranch or vinaigrette)

Instructions

  1. Cook brown rice according to package instructions.
  2. In a large bowl, combine cooked rice, diced chicken, black beans, corn, cherry tomatoes, and spices.
  3. Assemble the bowls by dividing the mixture into serving bowls.
  4. Top each bowl with lettuce, avocado slices, cheese, and cilantro.
  5. Serve with lime wedges and your choice of dressing.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Keep avocado slices separate to avoid browning. For meal prep, store base and toppings separately.
