Copycat Panera Bread Baja Bowl

A fresh and healthy Baja Bowl inspired by Panera, featuring brown rice, quinoa, black beans, and a medley of toppings.

Ingredients

  • 1 cup brown rice
  • 1 cup quinoa
  • 1 can black beans, rinsed
  • 1 cup sweet corn
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • ½ cup feta cheese, crumbled
  • ½ cup Greek yogurt
  • ¼ cup salsa verde

Instructions

  1. Cook brown rice and quinoa according to package instructions.
  2. In a bowl, combine cooked brown rice, quinoa, black beans, sweet corn, and halved cherry tomatoes.
  3. Slice the avocado and add it on top.
  4. Crumble feta cheese over the bowl.
  5. Drizzle with Greek yogurt and salsa verde before serving.
  6. Enjoy your wholesome Baja Bowl!

Notes

Serve warm or at room temperature for best texture. Store leftovers in an airtight container for up to three days.
