Cosmic Brownies

A nostalgic recipe for rich and fudgy cosmic brownies topped with rainbow candies.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup dark chocolate chips (for ganache)
  • 1/2 cup heavy cream
  • Rainbow candy-coated chips (or mini M&Ms)

Instructions

  1. Melt the butter in the microwave for about 30 seconds.
  2. Stir in the white and brown sugars until glossy.
  3. Add in the eggs and vanilla, mixing well.
  4. Mix in the dry ingredients: flour, cocoa, salt, and baking powder until just combined.
  5. Pour the batter into a lined pan and bake at 350°F for 18-20 minutes.
  6. For the ganache, melt the dark chocolate chips with the heavy cream, then cool slightly and spread over baked brownies.
  7. Top with rainbow candies while the ganache is still warm.
  8. Let the brownies set before cutting into squares.

Notes

Chill brownies before slicing for neater cuts. Use a metal pan for best results.
