This cottage cheese banana bread is moist, protein-rich, and naturally sweetened. A healthier twist on the classic banana bread, it’s made with blended cottage cheese for extra creaminess and fewer added fats. Perfect for breakfast, snacks, or guilt-free dessert.

3 ripe bananas, mashed

1/2 cup blended cottage cheese

2 large eggs

1/4 cup honey or maple syrup

1 tsp vanilla extract

1 1/2 cups whole wheat flour (or all-purpose)

1 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon (optional)

1/4 cup chopped walnuts or dark chocolate chips (optional)

Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

2. In a large bowl, mash the bananas until smooth.

3. Blend the cottage cheese until creamy and add to the bananas.

4. Whisk in eggs, honey (or maple syrup), and vanilla extract.

5. In a separate bowl, mix the flour, baking soda, salt, and cinnamon.

6. Add dry ingredients to the wet mixture. Stir until just combined.

7. Fold in optional nuts or chocolate chips.

8. Pour the batter into the prepared loaf pan and smooth the top.

9. Bake for 50–60 minutes or until a toothpick comes out clean.

10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for the best sweetness and texture.

Blending the cottage cheese creates a smoother, more uniform crumb.

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
