Cottage Cheese Chicken Parmesan Bowl

A quick and comforting bowl that blends creamy cottage cheese with classic chicken Parmesan flavors, perfect for busy nights.

  • 2 cups cottage cheese (small curd or your choice)
  • 2 chicken breasts or 3 cups cooked chicken, sliced
  • 1 to 1 1/2 cups tomato sauce or marinara
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs or panko
  • 1 clove garlic, minced or 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp dried basil or oregano, or fresh herbs to taste
  • Salt and black pepper to taste
  • Lemon wedge (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (if baking) or preheat air fryer per device directions.
  2. Season chicken with salt, pepper, and garlic. Coat with breadcrumbs and Parmesan if you like.
  3. Cook chicken: pan sear for 4-6 minutes per side until done, bake for 18-22 minutes, or air fry until golden and cooked through.
  4. Warm the tomato sauce in a small pan, stir in herbs and taste for salt.
  5. Place 1/2 cup cottage cheese in each bowl as the base.
  6. Slice or shred the chicken and place on top of cottage cheese.
  7. Spoon warm tomato sauce over the chicken and sprinkle with extra Parmesan and breadcrumbs.
  8. Add a drizzle of olive oil and a squeeze of lemon to finish.

Notes

Serve warm for the best texture and flavor. Can add spinach or roasted peppers for color.
