4 large eggs
1/2 cup cottage cheese
1/4 cup shredded cheddar cheese
1/4 cup cooked spinach or bell peppers
1/4 tsp salt
1/8 tsp black pepper
Optional: crumbled bacon, herbs, chili flakes
1. Preheat oven to 325°F and grease a muffin tin or use silicone molds.
2. Blend eggs and cottage cheese until smooth.
3. Add salt, pepper, and shredded cheese to the mix.
4. Fold in any cooked vegetables or mix-ins.
5. Pour into muffin cups, filling 3/4 of the way.
6. Bake for 22–25 minutes, using a water bath for creamier texture.
7. Cool slightly before removing and serve warm or refrigerate.
You can freeze these egg bites! Let them cool, then wrap individually.
