Cowboy Butter Lemon Bowtie Chicken with Broccoli Bliss

A quick and satisfying chicken and pasta dish, enriched with cowboy butter sauce, lemon, and fresh broccoli.

  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 unit lemon, juiced and zested
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Begin by cooking the bowtie pasta according to the package instructions. Drain and set aside.
  2. In a skillet over medium heat, melt the butter. Add minced garlic and cook until fragrant.
  3. Pour in the lemon juice and zest, then stir in the paprika, salt, and pepper.
  4. Add the cubed chicken to the skillet and cook until it’s no longer pink.
  5. Toss in the broccoli and cook until it’s tender.
  6. Finally, add the cooked pasta and mix well until everything is coated in the buttery sauce.

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stovetop.
