Cowboy Butter Garlic Chicken Tortellini with Fire-Roasted Red Peppers

A quick and tasty meal combining chicken, tortellini, and a rich garlic butter sauce with fire-roasted red peppers.

  • 12 oz Tortellini (fresh or frozen)
  • 4 tbsp Butter
  • 4 cloves Garlic (minced)
  • 1 cup Fire-roasted red peppers (jarred or canned)
  • 1/2 cup Parmesan cheese (grated)
  • 1 tsp Italian seasoning
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  3. Season chicken breasts with salt, pepper, and Italian seasoning, then add to the skillet. Cook until browned and cooked through, about 5-7 minutes per side.
  4. Add fire-roasted red peppers to the skillet and stir until warmed through.
  5. Combine the cooked tortellini and chicken mixture; toss to coat in the garlic butter sauce.
  6. Serve topped with grated Parmesan cheese and fresh parsley.

Notes

Use room temperature butter for quick melting. For more sauce, add chicken broth or cream. This dish stores well in the fridge for up to 3 days.
