Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 12 oz penne, fettuccine, or spaghetti
  • Salt, for the pasta water
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Fresh lemon juice
  • Sautéed vegetables (optional)
  • Shrimp (optional)

Instructions

  1. Pat the chicken dry, season with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4 to 6 minutes per side until cooked through. Remove and let it rest.
  2. Boil water with salt. Cook pasta until just al dente according to package directions. Reserve some pasta water, then drain.
  3. In the same skillet, melt butter and add minced garlic. Stir in Cajun seasoning and smoked paprika. Pour in chicken broth, then add heavy cream. Simmer until slightly thick. Stir in Parmesan.
  4. Slice the chicken and return to the pan. Add pasta and toss to coat. Add a splash of pasta water if needed. Finish with parsley and lemon juice.

Notes

For added flavor, include sautéed vegetables or switch chicken for shrimp. Adjust the heat with Cajun seasoning as desired.
