Creamy Chicken Pasta Bowl

A cozy and comforting dish made with pasta, chicken, and a creamy Greek yogurt sauce.

  • 8 oz pasta (like penne or fettuccine)
  • 1 lb chicken breast, diced
  • 1 cup Greek yogurt
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Reduce heat to low and add Greek yogurt, stirring until well combined.
  5. Add fresh spinach and cooked pasta, tossing everything together until the spinach is wilted and everything is heated through.
  6. Season with salt and pepper to taste.
  7. Serve warm, topped with grated Parmesan cheese if desired.

Notes

For added flavor, consider incorporating sun-dried tomatoes or mushrooms. A pinch of red pepper flakes can enhance the dish if you like some heat.
