Creamy Garlic Cheesy Chicken and Potatoes

A heartwarming dish full of flavor that combines chicken, potatoes, and a creamy garlic cheese sauce.

  • 4 boneless, skinless chicken breasts
  • 4 cups diced potatoes
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides, about 4-5 minutes per side.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the diced potatoes and heavy cream.
  6. Bring to a simmer, then sprinkle cheese over the top.
  7. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through and potatoes are tender.
  8. Garnish with fresh parsley before serving.
