Creamy Gnocchi with Spinach and Feta

A quick and comforting dish with soft gnocchi, bright spinach, and salty feta in a creamy sauce.

  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the spinach and cook until wilted.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the feta cheese, cooked gnocchi, salt, and pepper. Mix until well combined and heated through.
  6. Serve warm, topped with Parmesan cheese if desired.

Notes

For best results, use fresh spinach and crumble feta by hand. Adjust sauce thickness by adding milk or simmering.
